How could I establish a collaborative model for transporting foods that require refrigeration?

1-Because transportation of perishable products are very specific you need to ensure there will be refrigerated facilities available at the destination which you can rent it for a short period of time. Truck company (if they have office at destination) can help out with this or find similar companies
2-Group orders with "consume by date" and delivery as a big order
3- Look for cheaper options. I mean NY sushi restaurants import fresh fish from Japan on a weekly basis, I dont think any truck company/person will care for collaboration
4- Call various shipment companies and cut a deal,
I hope i get this right but what are you shipping in low quantity and costing you much money? Must look for different options or clients closer within your range

What call center headsets and technology setup would you use?

I definitely recommend plantronics. Check out their website and your can order them online.
I remember using CS540 model. Its wireless, good battery life, reduced background noise and easy to hook up. Its expensive but you can get a cheaper options on their site.

They are one of the leaders in this field.

What are some good sales strategies to try?

Individually:
Speak less, Listen more, Show interest
Ask about current practice and feedback before suggesting your product
Read about "the feldman method" (Ben Feldman)

Team Wise:
Set up an incentive program for most failed sales calls
Track your team failing sales calls and encourage them to fail more.
Will change the morale of the team and shift attitudes

What do you say to people who want to "pick your brain?"

Guidance and mentor ship is a crucial leadership skill that we all need. My job relies heavily on operations and walking the talk. Meanwhile, my consultancy relies heavily on understanding what individuals are trying to achieve as end result and how can I contribute to their success. Personally, I found this practice quite useful and time saving.

If you are trying to pick my brain, I need some information from you.
-What is the subject and what are you trying to achieve?
-What is your current progress and what are your challenges/achievements?
-What other potentials ideas you have and how can we work together?

Having "above type" of information saves our time and also allows me to gather some information in advance. We will not spend our time trying to lay the ground work but move immediately towards brains storming session and working towards a positive outcome.

How can I start a brainstorming strategy service to help novice entrepreneurs?

-Start!! Offer free sessions, make changes and collect feedback/testimonials. This will also allow you to develop your skills, Once you are confident enough you can start charging for fees. If you cant answer questions, research and get back.
-You mentioned lot of "i think" 'I believe" maybe its time that you start and having solid understanding of what you are capable of. Definitely join toastmasters.

Hotel Rate Parity Conflicts

OTA is a sales channel, one of the many out there.
If you are trying to capture OTA's clients (individuals) and make them your own direct client try this
1- Signup clients to your hotels loyalty membership program and tell them that they will get additional benefits and discounted rates
2- Promote special rate in your website directly to your clients
3- Provide voucher, letter or etc... "upon your return you will get......"
4- Always direct your clients to your business directly..
Litigation?
Emails, website, social media, memberships etc.. is a way to promote your business, so basically you are promoting your business in many channels, if your contract ties you down sit down and review your contract with OTA before renewal.. Talk to them face to face and explain, much better solution,

Your people, their actions and their brains!!
How I handled it?
You must be religious about this: take 1 hour of your daily work and make it a habit to train your employees on a certain subject of your business. Continuously sit and talk to about your services, your products, customer interaction etc... They must understand your logic and reasoning to start doing the same work as you do

Where should I look for advice in the area of in-flight experience design? I am designing a product for parents flying with babies.

1- Find in-flight customer experience managers, cabin supervisors, flight attendant, take them out for lunch/coffee.
2-Talk about your project and ask if they want to be involved on a success fee basis, or consulting fee
4-find the manufacturer and interview them
3-book your next flight in front of the baby board, take pictures and understand
4- talk to your family/friends traveling with babies.. and find out what is the biggest pain....
