Executive Chef and General Manager, National Chef Ambassador for the SNP

I am a second-generation chef, my dad was one of the executive chefs at Alabama's truly first fine dining restaurant called the Meadowlark. I have been a fine dining chef for over thirty years and was part of the team, at Hot and Hot Fish Club when we won the Iron Chef battle against Bobby Flay and when we won the James Beard Award. I offer help and teaching for personal cooking skills and restaurant consultations. This includes everything from helping the customer to learn knife skills and the basics of cooking (what a lot of clients don't understand is that sometimes it's the little fundamental things that can take their recipes to the next level), working with the customer to learn knew and exciting recipes as well as helping them to develop entirely new recipes if they so desire, helping customers customize their menus and meal plans for any specific nutritional needs or wants including those issues from medical problems or athletes who need a customized meal plan for muscle gain, or, weight loss, as well as any religious inclusions or exclusions. For clients working in the professional aspect of things, I offer advice on food cost where I can either review and help correct their food costs that are running awry or help plan and design the food costs to meet the clients personal needs and wants for their business. For professionals I also offer menu design, kitchen flow and layout, server station flow and lay out and interior front of the house design and ideal seating with basis on overall capacity vs. ideal turnover per hour numbers when the seating, wait times, and cook times are included into the data, and consultation, as well as, for local clients or clients who are willing to provide travel expenses on site training and training follow ups if necessary.
