I’ve been the chef, the waiter, the floor mopper and the owner (sometimes at the same time : ) I’ve designed facilities, programs, menus and policy. I’ve opened (and closed) several small businesses. There’ve also been some fascinating sidetracks, including nearly ten years as Chef and Director of Culinary Services in the treatment of eating disorders, and Guest Chef and Teacher in a prison-based culinary arts and foodservice course.
