I think you'd have a good market if you started with hotels like Ace, etc. who want to be trendy and using local consumer brands.
There are probably several ways to monetize this.
1) Work with the hospitality companies to curate the brands that they want to represent their company. You can charge as a service provider for this.
2) Work with the consumer brands and push the products on hospitality spaces. You can charge as a marketing agency.
3) Both options above also leave room for you to monetize as an affiliate (take kick-backs for sales generated by your service). I think it was Ace that was also selling the products that they were using to guests. (ex. if you liked the soap, towels, robe, etc. you could buy them through the hotel.) You can an affiliate kick-back (probably shared with the hotel in this case) for every sale.
These are just a few thoughts, but there are a ton of possibilities and I'd have to know more details about what you are thinking to advise better.

As someone outside your industry, I would recommend that you think more about how you can consolidate into fewer brands. Would hotels be interested in branching out into domestic staffing services?
My family is in the hotel business. I can tell that we would have absolutely no interest in doing this. We make sure out employees look after our property and provide great customer service. We do not have down time for them. We run a tight ship. The liability and other headaches that come with what you propose is incredible. The only thing we would consider doing is using one of our banquet facility rooms as a senior day-care center from 9am to 2pm Mon-Friday because a company would be paying us for the space and food. Everything else is on them.TP

Your strategy should encompass at least four components: (A) Complete Visual/verbal/social/technical audit to find/create needed assets for transition: know which assets need to be retired or replaced and what transitional assets are needed to bridge the gap. Prioritize: not everything always needs to change at once and the more you have the longer it will take or cost. Plan to convert brand book concepts/guidelines into tangible or digital deployables: how much "stuff" do you need?; vendor selection; budgeting; designing production files; ordering; quality assurance etc... (B) Internal (team) awareness & asset deployment program and monitoring compliance. (C) External publicity plan: aimed at existing clients & prospects, and any other stakeholders: social networks, media, affiliate partners, etc... Timing should be coordinated with industry / sector calendar (trade shows, if applicable), and major app update for maximum effectiveness. Do you need specialized short term PR/AD help? How can you leverage your 10K+ users to buy in / get the word out? (D) Technical migration & Monitoring Plan: seo strategy & tracking including all affected url redirects, landing pages, email changes, whatever is affected. Monitoring & analytics to see how effective the transition is (compared to old name stats) and when transitional assets can be retired.DC

Most of your bookings are going to come from local non digital marketing, but they will coincide with the digital marketing you do. The efforts need to be combined for effectiveness. What % of your marketing should be brand marketing vs direct marketing?
It depends on the stage of your business. If you are at the beginning, spending money on brand advertising is a sure NO. Which doesn't mean you shouldn't aim to build a brand... Building a brand is always good, it increases the value of your business allowing you also to sell it if you decide you want to exit and start something else. Spend money on direct marketing, test and refine what works and test new, even cheaper avenues. And build your brand without investing money in advertising, start with defining the mission & main story of your business, its key values them creating a memorable identity- logo, main colors, main fonts, templates for all marketing materials, activities, channels, tagline that captures your brand essence, and finally making sure you are consistent using the above tools. Branding also takes a lot of time but as long as you are consistent and you do a good job with the elements above, you will be on your way and you won't need to spend money advertising it. Obviously the more unique the business story & brand elements, the higher your chances to achieve brand awareness and recognition faster.DG
