I think a better way to think about it would be to choose based on your own skillset. Blogs can succeed or fail in any subject matter, but what sets you apart is the value you provide. Choose a topic that you're most knowledgeable about and that you can provide a unique perspective on.
And, even more important, don't limit yourself to blogging. It's a lot easier to go viral on TikTok right now than it is to go viral with a blog post – so by all means start the blog, but amplify it by repurposing your content for other platforms.
If you write a great blog article on a DIY subject, you can repurpose that into a TikTok instructional video and link back to the blog. That way you're amplifying the reach of both your platforms and doubling your chances of getting traffic.
Popular topics are one. You just need to speak a language that the reader understands and select the right words. If you decide to start a blog, then most likely you plan to work on it for more than one year. So, you should carefully consider what you plan to write about. Will this topic be just as interesting and relevant in a year or several years? Do you want to do it? Will the audience want to read about it? Of course, you cannot foresee the answer for sure. But there is a little trick. As a rule, broader topics “survive”, within the framework of which you can reveal current trends today and in a year.
First of all, you have to start from your passion. (What do you like most where on the process of creating a blog, you will not get bored as you progress in your goal. Second, consider the demand and competition. This is also debatable. Because it doesn't mean its not in-demand, there is less competition. So, best idea is to search for keywords related to your niche and analyze which is profitable niche. Targeting in-demand has high competition. If you are just starting out, better target those in-demand with less competition so to rank immediately (not quickly). I suggest you use a software to analyse the keyword competition. There are plenty out there. (Google it!). Also, keywords are relevant to rank and get notice, but still you have to satisfy the readers and establish your credibility first. (There is no overnight success in creating a successful blog). You have to work it out. In any niche, your dedication matters. Reach out other bloggers, do guest post, comment, etc. Be active in social media, to name a few that you need to do. Looking forward to your success!

Alternatively, I've uses http://jobs.problogger.net/ job board to post an opportunity, and then create a simple "test" for the writers. If they read the instructions and the content is great, try em' out .. if not, then pass. It takes time but you can find great people who will blog for $30-50 per post. Another way - not fast but high quality - is to approach existing blogs in your vertical with smaller audiences ... ask them to guest post or ghostwrite for you .. they already know the subject matter and blogging + if they have an audience you can incentivize them to promote the content via their social channel (by paying social share bonuses). I would lean more towards the premium subscription for the recurring income.
