If I go ahead and publish a website containing multiple HTML5 games in a 'safe' category such as sport, would I be able to get approved nowadays to display AdWords display ad units alongside the page content and within the games themselves.
Is Google still approving new sites/networks such as this?

You can approve your AdSense by compliting the minimum number of visitor people in a day and this is done by posting about your game on social media that is mostly used.
