Foodservice Consultant, The Cambridge Restaurant Project
Founder of Four Burgers, 2008, 20+ years experience in Fast Casual, Quick Serve restaurant concepts.
Co Founder, The Paramount Restaurant, Beacon Hill, Boston 1995 - 2011. As managing partner I established The Paramount as one of the busiest breakfast restaurants in Boston and, per sq foot, one of the busiest restaurants in the country. As managing partner, I saw sales grow from $850,000 in year 1 to over $2M at time of sale, all out of less than 1000 sf.
Co Founder, The Blarney Stone, Dorchester. Performed gut rehab and re branding of this legendary Boston landmark. As the first Irish bar in America to serve Guinness on draft, the challenge was to preserve the history and embrace the present. Opened in 2001 and sold (at a profit) 2006.
The restaurant business is a challenging but very rewarding field. I have had many successes and I have made my share of mistakes. These experiences have taught me a great deal about many aspects of the restaurant industry. I look forward to sharing what I have learned with you.
I spend my spare time with my family, enjoy traveling, bike racing, triathlon and fly fishing.
